The peas are cleaned, rinsed in fresh water, and parboiled in water, stirring, for 4 min.
Put into a dish of clean water that has a temperature of 37° C (100 °F).
The peas are now put into jars; tap the jar lightly against your hand so that they settle tightly and evenly.
Cover with brine solution — 12 g table salt, 15 g kitchen salt per litre of water. The brine solution must stand 0.5 cm from the upper rim of the jar.
Sterilise for 0.5–1 hour. After 2 days and nights, re-sterilise them for 30 min.
