Stir the eggs and the sugar together for 1/4 hour, add the whipped cream, the cognac, the spices, the flour; the washed butter is beaten in with the rolling pin.
Roll the dough out thin. Cut a paper pattern to fit the iron; place the pattern on the rolled-out dough, and cut out the cake accordingly.
Bake golden brown in a goro iron. Trim around the edges. The dough is best made the evening before it is to be rolled out.
You can use half butter and half lard or just lard, e.g. the lard left over from the fattigmann. Instead of using only wheat flour, you can take 1/4 kg potato starch and 1 kg wheat flour; you then have 1/4 kg wheat flour left over for the rolling out.
