Core the apples, peel them, and fill the opening with sugar.
Then roll out puff pastry to the thickness of a knife's back; mix ⅓ of the butter with the flour; when this is crumbled, add the water; work in the rest of the butter with the rolling pin.
Cut square pieces from this. Place the apples in the middle. Wrap the dough around them, dip in the beaten egg, then in the blanched, finely chopped almonds mixed with 1 spoon of sugar.
Place on a buttered baking sheet with the side where the dough is pressed together facing down. Bake in a hot oven for about ½ hour, or until the apples are tender.
