Choose flawless, freshly cut asparagus; wash them in clean water and place them one by one in a dish of fresh water.
Then cut away everything hard and tough with a sharp knife, after which the asparagus is scraped smooth; cut them all to the same length, about 20 cm., and return them to fresh water.
Blanch for 5–7 min. in a brine solution — 12 gr. table salt and 15 gr. kitchen salt per 1 litre of water — then place in water held at 37° C (100 °F).
Now lay the jar horizontally on a table and place the asparagus in tips first; stand the jar upright and pour freshly boiled brine over them to 0.5 cm. from the jar's rim.
Sterilise for 1.25 to 1.5 hours.
N.B. The trimmings left over after cutting, or tips that have broken off, are very valuable for soups and other small dishes. Pack these into the jars, press them tightly together, and treat them otherwise exactly as above.
Asparagus preserved by this method compares well with imported asparagus.
