Original 1900 recipe

Cold, egg-free orange fromage from Kogebog for skole og hjem (1900): a sugar syrup with gelatin is mixed with orange juice and grated zest, cooled and combined with whipped cream before setting in a mould.

En klassisk kald eggefri appelsinfromasj fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Fromasj var på denne tiden en fin selskapsdessert, og appelsin ble regnet som en luksusvare vinterstid.
Boil a sugar syrup
Boil the sugar and water gently for 10 minutes.
Dissolve the gelatin
Soak the gelatin sheets in cold water, squeeze them out and dissolve them in the warm sugar syrup. Take the pot off the heat.
Add the orange
Stir in the freshly squeezed juice from all the oranges and the thinly pared zest from 4 of them. Stir until the mixture is cold.
Fold in the cream
Gently fold in the whipped cream.
Set in the mould
Pour into a mould rinsed in cold water and chill until the fromage has set. Turn out before serving.
