Good lingonberries are cleaned this way: put a portion at a time into a tub of cold water; the whole berries then float on top, together with leaves and stalks, while the ripest and the rotten berries sink to the bottom.
With a slotted spoon take up the whole berries and clean them, and finally the soft ones, freeing them of any rotten ones. The whole berries are then used for jam, the soft ones for juice.
Drop the berries for a moment into a pot of boiling water, taking them up without letting them boil; this rids the berries of the bitter taste otherwise found in lingonberries.
Now preserve them with: 375 grams of sugar (granulated) per litre of berries.
Layer the berries and sugar into the pot together with whole cinnamon and cook slowly for 15–20 minutes, pour into dry, clean jars and cover once cold.
