The leaves must first be looked over well and cleaned, but the stalks should not be removed from the leaves, as they are just as good as the leaves.
The sorrel is then washed in several changes of water, after which it goes into a pot of boiling water. No more water than just enough to stand over the sorrel.
It then boils for about 5 minutes. Pour the sorrel and the water into a woollen bag.
The next day the water will have drained off and the sorrel will be dry enough to lift out. Now pound it fine with a mallet.
If you want to keep it for winter use, put it in a crock with a linen cloth over it and then a layer of fat. Tie the crock over with preserving paper or bladder (skin).
The clear, drained-off juice from the sorrel can be used for pudding and closely resembles rhubarb pudding. Add sugar to taste and a little ground or whole cinnamon, and thicken with potato starch.
Eaten cold like other fruit pudding with cream-milk.
