Original 1900 recipe
Verbatim from the 1900 edition of the Cookbook for School and Home (Erken & Caroline Steen).

Ris à la Malta from Erken & Caroline Steen (1900). Rice is pre-boiled in water, cooked tender in white wine with sugar, mixed with orange juice and gelatine, folded with whipped cream and set in a mould. Total cost in the original: kr. 1.43.

Ris à la Malta i en tidlig norsk variant fra Erken og Caroline Steens «Kogebog for skole og hjem» (1900). Her er retten en gelérik fromasj med hvitvin og appelsin, mer forseggjort enn dagens enkle riskrem med appelsin.
Pre-boil the rice
Put the washed rice in boiling water and let it simmer for about 15 minutes.
Cook in wine
Drain off the water and let the rice cook tender in the white wine. Add sugar to taste.
Add juice and gelatine
Take the pot off the heat. Stir in the pressed orange juice and the dissolved gelatine.
Fold in the cream
When the mixture is well cooled, gently fold in the whipped cream.
Set in a mould
Pour the mixture into a moistened mould and let it set in the cold before serving.
