Put the washed rice over the heat with enough water to stand well above it; boil for 5 min., drain, return it to the pot with the salt and stock, and steam until tender.
Stir the butter and curry together and mix into the rice along with the onion juice.
Grease a mould and line it with the cooked rice; in the centre place the salmon, freed of skin and bone, after it has rested 1/2 hour steeping in the lemon juice, pepper and — if needed — salt.
Cover the fish with rice, cook the mould in a water bath for 1/2 hour, turn it out, and garnish with hard-boiled eggs cut lengthwise into 8 parts.
Serve with hollandaise sauce.
N.B. Leftovers of poached trout or other oily fish may also be used for this dish.
