How to make it

  1. 1

    Cut up the lobster

Cut up the cooked, cold lobster and take out the meat. Remove the intestine and the stomach sac (the "pope"). Cut the meat into small pieces. Set the roe aside separately.

  2. 2

    Make the sauce

Melt the butter and stir in the flour. Thin with the milk and bring to the boil. Add the pepper and take the pan off the heat. Stir in the egg yolk, the parsley and the lobster meat.

  3. 3

    Fill and bake

Divide the mixture among the shells. Sprinkle with rusk crumbs and drizzle with quite a little melted butter. Bake in the oven for 5–8 minutes.

  4. 4

    Garnish

Garnish with the finely grated lobster roe and finely chopped parsley. For how to boil lobster and crayfish, see "Kogebog for skole og hjem", page 145.
