Boil the hen
Scald the hen, open it and wash it. Put it on with water and salt, just enough to cover. Boil for 2–4 hours depending on its age. Good chickens are done after about 1 hour.
Cut up
Take it out and rinse with cold water so the meat becomes whiter. Cut into suitable pieces and keep warm in a little of the stock.
Make the sauce
Melt the butter, stir in the flour and thin with the strained, skimmed stock. Bring to the boil and simmer for 5–10 minutes. Stir in the cream, sugar, lemon juice, the beaten egg yolks and salt to taste. The sauce must not boil once the egg yolks have gone in.
Serve
Arrange the meat on a flat dish with 3–4 small lettuce rosettes along the edge. Pour over a little sauce and place the well-heated asparagus in bundles between the lettuce. Serve the rest of the sauce alongside.
Hay box
Hens are well suited to cooking in a hay box. After cleaning the hen in the evening, let it boil on the stove for about 20 minutes, then put it straight into the hay box and leave it there all night. For hay-box cooking, see “Kogebog for skole og hjem”, page 93.
