How to make it

  1. 1

    Soak the pig

Leave the pig overnight in water with salt and vinegar, 10 litres of water to 1 litre of salt and 5 tbsp vinegar. Lift it out and dry it. Rub it inside and out with mixed salt and pepper.

  2. 2

    Prepare for roasting

Place the pig on its knees in the roasting pan with the boiling water, letting the head rest on the edge of the pan. Put small dabs of butter on it and cover with white paper greased with cold butter.

  3. 3

    Roast

The pig should not be basted vigorously, but rubbed now and then with cold butter. Roast in a hot oven (about 200 °C (390 °F)) for 3–4 hours. Leave the oven door open for the last quarter of an hour so the crackling becomes crisper.

  4. 4

    Sauce and accompaniments

Serve with the fat from the pan, browned well, with 1 dl red wine added and 1 tsp mustard stirred into the wine. Serve with fried potatoes, cooked ornamental pears and prunes, chestnuts and sauerkraut.
