The suitably de-salted meat is rinsed, put on the fire in cold water — just enough to cover it — with the one teaspoon of sugar; add the pork when the meat has cooked 0.5 hour.
Allow about 3 hours' cooking time. — Skim well and stir the pot often.
The peas are rinsed, soaked overnight in cold water; this water is thrown out. The peas are put on the fire in enough cold water to cover them well; the sugar is added. Simmer while stirring about 2.5 hours, thin to taste with stock from the salt meat.
The onion is cleaned and cut into thin slices crosswise and added to the soup at the same time as the salt stock; the soup now cooks at somewhat higher heat for about 0.5 hour.
If the water the peas were put on with boils down too much, more must be added, preferably boiling water, until the peas are cooked tender.
N.B. Thyme may also be added to the soup, if you like it.
N.B. Preferably do not eat the soup and the meat the same day. Eat the meat with a fruit-syrup or milk soup, and the soup, for example, with pancakes as a second course.
N.B. This dish is particularly suited to hay-box cooking.
