Bring the well-skimmed meat stock to the boil, whisking vigorously, together with the spices, the unbeaten egg whites, the crushed eggshells, the pressed-out lemon juice, the gravy browning, and the rinsed, cut-up gelatine.
After the boil it must not be stirred; set it off the heat, cover with a lid, and let it stand for 10 minutes; strain it through a cloth that has been rinsed in hot water and tied to an overturned kitchen stool.
Rinse one larger or several smaller moulds with cold water; pour in a couple of spoonfuls of aspic, and when this is almost set, decorate the mould with cooked, very finely cut root vegetables, capers, cucumber slices, or whatever you like; carefully pour a teaspoon of aspic into the mould.
When this has set, place in the mould whatever finely cut meat you have, such as ham, veal, tongue, flaked fish, shrimp, mixed with finely cut salad, and so on. Fill up with aspic and set the moulds in a cool place to set.
Turn out after about 6 hours and serve on a dish on which is laid very finely cut salad and small bouquets of cress.
