To get a good sauerkraut, it must, after being cut into fine strips, be parboiled in boiling water, and then cook in thin meat stock, with a teaspoon of sugar, a child's spoon of butter and a child's spoon of caraway added.
Then allow ample time to simmer gently until quite tender. It does not get any fresh, pretty colour this way, but it becomes tasty.
The colour can, incidentally, be improved by adding a little red wine just before serving.
