The carrots are washed and cleaned first and cut lengthwise if they are large; if they are small they are used whole, which looks best.
Then boil them in quite a little water with a little salt in it. When the carrots are boiled they are taken up, and the stock is strained.
In the pot you have a slice of butter, into which a tablespoon of wheat flour is blended smooth, and you then thin with the carrot stock and 2 to 3 tablespoons of sweet cream until the sauce is suitably thick.
This is then poured over the boiled carrots and used alongside roast meat, fried fish, salt meat and so on.
If you want to cream swede, wash and clean it first, cut it into small oblong squares, and boil it in quite a little water with salt in, just like the carrots. The sauce is prepared the same way.
