Clean the woodcock by drawing the skin off the head, putting out the eyes, and cutting off the lowest joint of the feet. Draw out the windpipe and the gullet from above through the throat cavity, and remove the offal and set it aside, discarding the hard gizzard, which is not used.
The beak is pushed through one thigh, the body, and out through the other thigh. Rub the woodcock with a very little salt, cover it with slices of bacon, which are tied on.
Lightly brown the butter and brown the woodcocks in it, add the cream and the stock, and let simmer gently for half an hour. Remove the ties and serve the woodcocks in their wrapping, after being cut in two. Boil the sauce down over a brisk flame.
The offal spread is arranged around the woodcocks on the dish, after being prepared as follows: Cook the finely chopped shallot and parsley in the butter for a couple of minutes, stir in the finely chopped offal, and add the red wine. When it is well cooled, stir in the egg yolk, salt, pepper and nutmeg to taste.
Spread small cut slices of white bread thickly with this paste, and place in a hot oven until they are thoroughly warm.
