Erken's "Rings" (1914): crisp cut-out cookies made from 300 g butter, 180 g sugar, 300 g rye flour, and 250 g wheat flour, rolled ½ cm thick, pricked, with a small hole in the side, baked golden at moderate heat.

Simple rye-and-wheat-flour cookies from the small-cakes chapter of "Stor kokebok" (1914). "Washed butter" was butter that had been worked in cold water to remove the salt and buttermilk.
Cream the butter
Cream the butter light and airy for about 15 minutes, and stir in the sugar.
Work in the flour
Sift in the rye and wheat flour and work the dough together.
Roll and cut out
Roll the dough out to ½ cm thickness. Prick it with a fork and cut out small, round cookies with a cutter or a glass. Poke a small hole in one side of each cookie.
Bake
Place the cookies on a greased or parchment-lined baking sheet and bake them nicely golden at not-too-strong heat, about 160–170 °C (340 °F) for 10–12 minutes.
Weights given in grams, modern spelling in the method. "Washed butter" is replaced with unsalted butter. Baking temperature and time are estimated for a modern oven.
