How to make it

  1. 1

    Boil the crayfish

Wash the live crayfish and boil them in boiling salted water for 15–20 minutes. Let them cool. Take the meat from the tails as whole as possible and remove the black intestine. Rub the roe smooth with a little butter.

  2. 2

    Make the stock

Pound the crayfish shells in a mortar with 60 g butter. Put them in a pot with the carrot and celery, pour over the stock and boil, stirring, for 15 minutes. Strain.

  3. 3

    Make the soup

Melt 40 g butter and stir in the flour. Thin gradually with the stock and boil for 10 minutes.

  4. 4

    Season and serve

Just before serving, stir in the sherry, cayenne pepper, sugar, parsley, the crayfish tails and a small pinch of lobster colouring. Lobster soup and shrimp soup are made the same way.
