How to make it

  1. 1

    Decorate the mould

Grease a smooth mould well. Cut the candied peel into shapes and decorate the bottom of the mould with them.

  2. 2

    Fill the mould

Layer the thin slices of bread in the mould together with the coarsely chopped candied peel left over from the decorating. The mould should be full.

  3. 3

    Make the egg mixture

Whisk the eggs. Add the lukewarm milk little by little, and stir in the sugar, vanilla and cream. Strain the mixture over the bread in the mould and leave for 20–30 minutes.

  4. 4

    Cook in a water bath

Cover the mould with paper and cook the pudding in a water bath for 1–1½ hours. Carefully turn it out of the mould and serve with German sauce.
