Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 71 (falt i det fri)
From the porridge section in "Stor kokebok" (1914). Buttermilk was the byproduct of churning butter and was used for both porridge and soup in Norwegian homes.
Stir out the flour
Stir the cold buttermilk little by little into the flour to a lump-free, thin batter.
Bring to a boil while stirring
Put the pot over the heat and stir without stopping until the mixture boils.
Thin with boiling milk
Thin with the boiling milk little by little while stirring, until the porridge has the desired thickness.
Salt
Season with salt at the end and serve the porridge hot.
Buttermilk is given as modern cultured milk/soured milk. Measurements are kept (liter, grams), "spiseske" is translated as tablespoon. Otherwise no changes to the method.
