Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 51 (falt i det fri)
Caraway greens are the young leaves of caraway, a classic spring ingredient in Norwegian cooking. Erken stresses that the leaves must be cleaned and chopped very finely, or they separate from the flour-based roux and float up.
Clean the greens
Clean the caraway greens well, rinse them in several changes of water, and chop them finely or run them four times through the meat grinder.
Make the roux
Melt the butter in a pot and stir in the flour.
Add the greens
Stir in the chopped caraway greens.
Thin with stock
Thin with the boiling meat stock a little at a time, and let the soup come to a boil between each addition. Otherwise the caraway greens separate from the roux and float up.
Season and serve
Season with salt. Serve with poached eggs, sliced hard-boiled eggs or egg dumplings in the soup.
The amount of butter is interpreted as 80 g (the OCR gave "8 gr.", which is implausible against 60 g flour). "1 desserttallerkenfuld" is estimated at about 4 dl of loosely packed leaves. Old measures are kept where they are unambiguous, and the method is rewritten into steps.
