Canned sweet cherries (Erken 1914): cleaned berries are packed tightly into jars, covered with a syrup of 300 g sugar to 1 liter of water and sterilized 20 minutes at 80 °C.
Source: Henriette Schønberg Erken, Stor kokebok, 1914-utg. s. 592 (falt i det fri)
Canning in jars at low temperature was new and modern in 1914 and got a lot of space in Erken's preserving chapter. The berries hold their shape when sterilized at only 80 °C (175 °F).
Make the syrup
Stir the sugar into the water to make a syrup.
Fill the jars
Pack the cleaned berries tightly and firmly into the jars and pour the syrup over.
Sterilize
Seal the jars and sterilize them for 20 minutes at 80 °C (175 °F).
Measures are written in modern units. It is specified that the syrup is made of sugar and water, and that the jars are sealed before sterilizing; otherwise the method is unchanged.
