Cherry Syrup I

Cherry Syrup I from Erken's Stor kokebok (1914): crushed cherries are boiled with water, the juice is strained and boiled 10–15 minutes with 375 g sugar per liter, then bottled hot, corked, and sealed with wax.

From the chapter on preserving in Henriette Schønberg Erken's "Stor kokebok" (1914). Cherry syrup was boiled and bottled hot, then corked and sealed with wax for long keeping.

How to make it

    Crush the berries

    Crush the cherries in a mortar and pour the water over them.

    Boil out the juice

    Put the pot over the heat and let it boil until the juice has cooked out of the berries.

    Strain and measure

    Strain the juice and measure it. Allow 375 g sugar for each liter of juice.

    Boil the juice

    Boil the juice with the sugar for 10–15 minutes and skim well.

    Bottle

    Pour the hot juice into clean bottles, cork them, and seal the corks with wax.

Measurements are modernized (4 dl = 4 deciliters). The amount of sugar is given per liter of finished juice as in the original. The method is divided into numbered steps and the language of the steps is modernized.
