Garnished with asparagus and parsley and served on slices of bread, this is a festive meat dish in the 1949 edition.
Reduce the base
Boil onion, vinegar, pepper and salt down to one third. Lift the pot off the heat.
Make the sauce
Whisk in the beaten egg yolks and let them thicken over the heat, whisking hard. Add the melted, cooled butter little by little. Wring the sauce through a cloth and stir in chopped tarragon, cayenne and stock. Warm it in a water bath until lukewarm.
Fry bread and meat
Dry the meat, cut it into slices a finger thick, pound lightly and rub with pepper and salt. Fry the bread slices golden in 120 g butter. Brown the meat in the rest of the butter and fry 3–4 minutes per side. Place the meat on the bread.
Serve
Deglaze the pan with the stock. Pour the sauce over the meat and garnish the dish with asparagus and a little fresh parsley. Serve at once.
Note
The sauce contains egg yolks that are only gently heated. Use fresh, good-quality eggs, keep it lukewarm and serve at once. If it gets too hot, it will curdle.
Measures are in modern units and the frying time of 3–4 minutes per side is kept. The butter is divided between bread, meat and sauce.
