Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Household cordial from Erken 1914: berry pulp left over from juicing is placed in water with citric acid for a week, strained, and the juice is boiled for 20 minutes with ½ kg sugar per liter before being bottled hot.

A thrift recipe from the preserving chapter of "Stor kokebok" (1914): the leftovers ("the pulp") from juicing berries are put to use in a simpler everyday cordial. Citric acid provides tartness and keeping quality, blueberries provide color.
Collect the pulp
Collect everything left over after pressing and straining assorted kinds of berries in a crock or tub.
Steep in water
Pour on 3/4 liter of water and 5 g citric acid per kilo of pulp. Cover and let stand for one week. If you want a stronger color, crush a few liters of blueberries and mix them in.
Strain
Strain or press out the juice and let it stand until the next day.
Boil with sugar
Measure the juice and boil it with 1/2 kg sugar per liter for 20 minutes. Skim well.
Bottle
Fill the hot juice into warmed bottles, cork and seal them with wax.
Amounts are set out per kilo of berry pulp in modern units (l, g, kg). The method is divided into numbered steps and the language modernized; sealing the corks with wax is kept as optional.
