Boil the hen
Scald the hen, open and clean it and rinse it well. Leave it in water overnight. Boil it in lightly salted water until tender, 2–5 hours depending on its age. Rinse it with cold water and cut the meat into fine strips.
Mix the salad
Mix the meat with the washed, coarsely cut head of lettuce. Drizzle over 1 tbsp oil, ½ tbsp vinegar and the lemon juice. Put on a dish.
Make the dressing
Whisk the egg yolks and the cream together cold. Put on the heat and stir until well thickened, without letting it boil. Take off the heat and stir until cold. Drip in the rest of the oil and vinegar drop by drop, and add sugar, salt and pepper. Stir the mustard into a little of the dressing before stirring it in. Stir until the dressing is as glossy as possible.
Serve
Pour the dressing over the salad. Sprinkle the horseradish with the beetroot vinegar and garnish the salad with it and a little finely cut lettuce.
Note
Note: the dressing is made with egg yolks that are only heated until they thicken. Pregnant women, the elderly and very small children should be careful with such dishes.
