How to make it

  1. 1

    Prepare the fish

Clean and wash the fish well. Make a cut along the back so the skin does not split more than necessary during cooking.

  2. 2

    Poach the fish

Place the fish in a fish kettle and pour on cold water, just enough to cover the fish. Add the bay leaf, peppercorns, vinegar and salt. Bring slowly to the boil, skim, and lift the fish out carefully as soon as it has come to the boil.

  3. 3

    Arrange

Place the fish on a platter with a napkin underneath. Garnish with lemon slices cut well halfway through, with a sprig of parsley tucked into each. Also garnish with lettuce and small bunches of coarsely grated horseradish drizzled with a little beetroot vinegar.

  4. 4

    Serve

Serve with English potatoes (see "Kogebog for skole og hjem", page 85).
