How to make it

  1. 1

    Prepare the goose

Pluck the goose, clean it thoroughly of feathers and quills, open it and leave it in water overnight.

  2. 2

    Boil the goose

Put the goose into boiling, lightly salted water so that it is well covered, and add the cleaned parsley root and celeriac. Boil until the goose is tender, about 1½–2 hours. Take it out, rinse with cold water and cut into suitable pieces. Keep them warm in a little of the stock.

  3. 3

    Make the sauce

Melt the butter, stir in the flour and thin with the strained, skimmed stock. Bring to the boil and simmer for 5–10 minutes. Remove from the heat and add the cayenne, sugar, lemon juice, sherry and the egg yolks beaten with the cream. Season with salt. Keep the sauce warm in a bain-marie, in a larger pan of boiling water.

  4. 4

    Serve

Arrange the carved goose on a flat dish, pour the sauce over and place puff pastry points around it.
