How to make it

  1. 1

    Make the potato stuffing

Clean, wash and dry the flounder. Cut out the fillets and skin them. Sprinkle with salt and leave for a quarter of an hour. Grate the boiled potato finely and stir in the egg yolk, the melted butter, pepper and a pinch of salt.

  2. 2

    Stuff and bread

Put a small teaspoon of the potato stuffing on one half of each fillet and fold the other half over it. Turn the fillets in egg white and rusk crumbs.

  3. 3

    Fry

Fry them in lard until light golden brown. Lay the pieces on a slotted spoon. If they tend to spring open, press them together with a fork or knife while frying.

  4. 4

    Arrange

Serve the fillets on a potato border (see “Kogebog for skole og hjem”, page 187) laid lengthwise on a flat dish. Wrap a cut-out paper frill around a small piece of uncooked macaroni and stick it into the fillets where they are folded. Garnish with lemon slices and parsley. Serve with browned butter, brown piquant sauce or remoulade sauce.
