Set aside a few teaspoons of flour for the baking powder; this is kept to be added as the last thing.
With the rest of the flour the preserved fruit is then mixed, and the eggs and the previously prepared mixture of butter and sugar are added while beating constantly.
Then the milk and the vanilla essence are stirred in, and finally the Royal baking powder.
Pour the mixture into a cake tin lined with greaseproof paper, then set the tin on a baking sheet covered with sand and bake it in a not too hot oven for 1½ hours.
It can also be baked in the ordinary way in a well-greased stoneware mould without a sand base.
If one uses a tin mould for fruit cakes, it will get a less good flavour, as the fruit takes on the taste of the tin and thereby spoils the whole cake.
