Take a litre of slightly soured cream, let it boil for 20 minutes over low heat, then stir in a heaped spoonful of wheat flour with a whisk-stick, and let it go on boiling with gentle stirring until the butter beads up.
Then tilt the pot slightly so the porridge runs down to one side; it is then easier to skim off the butter. To draw out the butter more quickly, you can add a couple of tablespoons of cold water.
Once the butter has been drawn off, work in the flour, then thin little by little with boiling milk. Make sure the porridge boils between each addition.
When the porridge is done, salt it.
For 1 l. cream and 3 l. milk, 340 g. flour.
