How to make it

  1. 1

    Boil the figs

Put the washed figs on the stove in the cold water. Boil them until tender, and chop them finely. Continue boiling the liquid until only 2–3 tablespoons are left, and cool it well.

  2. 2

    Whisk the egg whites

Whisk the egg whites stiff. Stir in the cream of tartar and keep whisking for a few minutes. Fold in the sifted icing sugar, the chopped figs and the well-cooled fig liquid. Keep whisking all the time.

  3. 3

    Steam in a water bath

Put the mixture in a well-greased mould and cook it in a water bath for about half an hour. Let the mould stand on folded paper or a wooden board in the water bath.

  4. 4

    Serve

Turn the pudding out of the mould. Serve it warm or cold, with or without custard sauce.
