Dried sliced beans were a common winter supply before freezers. The drying frame was a wooden frame with netting or canvas that was set into the drying cabinet.
Slice the beans
Trim the beans and cut green beans and wax beans diagonally into pieces about 2 cm wide.
Blanch
Blanch the sliced beans in boiling water.
Dry
Spread the beans out immediately on the drying tray and dry them at 80–90 °C (195 °F) for about 2–2½ hours.
The language has been modernized; measurements, temperature and time are unchanged. The drying frame is explained as a drying tray.
