Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Cabbage is cut into strips, blanched in steam for 18–20 min or water for 4–6 min, and dried at 80–90 °C falling to 60 °C for 4–6 hours; stored dry in linen bags or tin boxes.

Clean and shred
Clean the cabbage and cut it into strips.
Blanch
Blanch the strips in steam for 18–20 minutes, or in boiling water for 4–6 minutes.
Dry
Dry the cabbage at 80–90 °C (195 °F), falling to 60 °C (140 °F), for 4–6 hours.
Store
Store dried vegetables in a dry place in linen bags or tin boxes.
The language has been modernized; times and temperatures are unchanged. The storage advice has been included as its own step.
