Cherries (Dried)

Dried cherries: placed at the top of the drying oven, preferably the same day in humid weather; flawless berries from dry weather may be sun-dried first. Dried at 50 °C rising to 70 °C for 6–9 hours.

How to make it

    Assess the berries

    If the berries are harvested in humid weather, they should if possible go into the top of the drying oven the same day they are picked.

    Optional sun-drying

    If the berries are picked in dry weather and completely flawless, they can be sun-dried for a couple of days before being put in the drying oven.

    Dry

    Dry the berries at 50 °C (120 °F), rising to 70 °C (160 °F), for 6–9 hours.
