How to make it

  1. 1

    Clarify the stock

Bring the cold, well-skimmed stock to the boil, whisking vigorously, together with the spices, the unwhisked egg whites, the crushed eggshells, the lemon juice, the colouring and the gelatine. After it has come to the boil, do not stir any more.

  2. 2

    Let stand and strain

Move the pan off the heat, cover it and let it stand for 10 minutes. Strain through a cloth rinsed in hot water and tied to an upturned kitchen stool.

  3. 3

    Decorate the mould

Rinse one large or several small moulds with cold water. Pour in a couple of spoonfuls of aspic, and when it has almost set, decorate the mould with cooked, finely cut root vegetables, capers, cucumber slices or whatever you like.

  4. 4

    Fill the mould

Carefully pour in a spoonful of aspic, and when it has set, add finely cut meat mixed with finely shredded lettuce. Top up with aspic and put the moulds in a cool place to set.

  5. 5

    Turn out and serve

Turn out the aspic after about 6 hours and serve on a dish with finely shredded lettuce and small bunches of cress. Note: use the colouring sparingly.
