How to make it

  1. 1

    Squeeze the juice

Squeeze the oranges and the lemon and strain the juice through a cloth.

  2. 2

    Clear jelly

Put the water in an enamelled pot together with the peel of one orange and the lemon peel. All the white pith must be removed from the peel. Add the sugar, the unwhisked egg whites, the crushed eggshells and the rinsed, snipped gelatine leaves. Put the pot on the heat and whisk until it comes to the boil. Boil well.

  3. 3

    Rest and strain

Take the pot off the heat, put on the lid and leave it undisturbed for 15 minutes. Strain through a cloth that has first been dipped in hot water.

  4. 4

    Cool and flavour

Cool well and add the orange and lemon juice and the wine. Stir until cold, and pour into a glass bowl. Serve with or without whipped cream.
