How to make it

  1. 1

    Whisk everything together

Rinse the gelatine leaves and snip them up. Put the wine, water, gelatine, sugar, lemon juice and thinly peeled lemon zest (without the white pith), unwhisked egg whites and crushed eggshells in an enamelled pot. Whisk for a couple of minutes.

  2. 2

    Bring to the boil

Place over the heat and bring to the boil, whisking constantly. When the whisking stops and the jelly rises to the edge of the pot, lift it off the heat.

  3. 3

    Let it settle

Set the pot, covered, near the heat. It must not boil. Leave for ¼ hour.

  4. 4

    Strain

Carefully strain the jelly through a cloth dampened in hot water and tied to an upturned stool. Preferably make it the day before serving, and serve with egg custard.
