Lingonberry and Bird Cherry Cordial

A mixed cordial of 1 l bird cherries and 2 l lingonberries cooked with 2 l water, strained and cooked like ordinary cordial with 375 g sugar per liter.

About the dish

A mixed cordial in which bird cherry (hegg) lends an almond-like, robust flavor to the lingonberry juice. From the "Mixed cordials" section of the preserving chapter.

How to make it

    Cook the berries

    Cook the bird cherries and lingonberries with the water until the berries are cooked out.

    Strain

    Strain the juice through a straining cloth and measure it.

    Cook the cordial

    Dissolve 375 g sugar per liter of juice before it comes to a boil; boil 4–5 minutes and skim.

    Bottle

    Fill the cordial hot into dry, warm bottles, cork and seal with wax.
