Frequently asked questions

How much sugar should I use?
½ kg sugar per liter of berries. The sugar is boiled with the juice, not with the whole berries.
What do I do with the less pretty berries?
They are pressed for juice. The juice is boiled with the sugar, cooled and poured cold over the fine, whole berries in the jar.
Why should the juice be cold when it is poured over?
This way the choice berries keep their shape and stay whole, instead of cooking to pieces.
How old is the recipe?
It is from Henriette Schønberg Erken's 'Stor kokebok' (1914), page 604.
