How to make it

  1. 1

    Prepare the tomatoes

Put the cleaned tomatoes in boiling water for a moment and lift them out at once. Cut out a small square by the stalk and squeeze out some of the juice and seeds. Let them get completely cold.

  2. 2

    Make sauce I

Stir the egg yolk white with the salt. Add the oil and vinegar drop by drop and stir in the pepper and mustard. Coat a washed lettuce leaf for each tomato with this sauce and set the tomato on top.

  3. 3

    Make sauce II

Stir the salt, mustard and cayenne together in a small pan. Add the 2 egg yolks and the half-whipped egg white and whisk for 10 minutes. Stir in the butter in small pieces and the cream little by little. Set the pan in another pan of hot water and stir until the sauce thickens. Remove from the heat and stir in the vinegar drop by drop. Set aside until completely cold.

  4. 4

    Fill and garnish

Fill the tomatoes with sauce II. Hard-boil the 2 eggs for 10–15 minutes, shell them and cut each egg lengthways into 4. Place one eighth on top of each tomato and press lightly into the sauce. Garnish the platter with green lettuce or cress. Note: both sauces contain raw or only lightly heated eggs.
