How to make it

  1. 1

    Cook the prunes

Put the washed prunes on to cook in the cold water with the sugar and the very thinly peeled lemon zest. Let them simmer under a lid for ½–¾ hour until tender. Remove them, take out the stones and the lemon zest.

  2. 2

    Make the rice mould

Rinse the pot with cold water and add the milk. When it boils, stir in the rice flour mixed with a little of the cold milk. Stir off the heat, add the sugar and lemon juice, and bring to the boil. Take the pot off the heat and stir in the gelatine dissolved in ½ dl lukewarm water.

  3. 3

    Fold in the cream

Whip the cream stiff and stir it in a little at a time. Pour the mixture into a moistened mould, preferably one with a tube in the middle.

  4. 4

    Serve

Turn out the rice mould when it is firm. Place the prunes partly in the middle and partly around it.
