Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

A short recipe for pork steak: sliced pork fried like an ordinary steak in butter or lard, with onion, salt, and pepper.

One of Erken's shortest recipes: she refers to the description of ordinary steak earlier in the meat chapter and gives only the quantities. Lard was a common frying fat in 1914.
Prepare the meat
Pat the meat slices dry, beat them lightly flat, and trim them neatly.
Fry the steaks
Brown the butter or lard in a well-heated pan and fry the steaks quickly brown on both sides, until cooked through. Sprinkle with salt and pepper.
Onion and sauce
Fry the onion slices golden in the fat and lay them over the steaks. Deglaze the pan with a little water or stock and pour the pan juices over.
Quantities are converted to modern measures, and the brief note "treated like an ordinary steak" is written out as a simple method using a frying pan and onion. "Fleskefett" is given as lard, with butter as an alternative.
