Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Pork tenderloin larded with fatback, marinated overnight in red wine with onion, parsley, and celery greens, browned and steamed tender, served with a brown cream sauce, fried tomatoes, pea purée, and fruit jelly.

From the meat chapter of "Stor kokebok" (1914). The tenderloin is larded with fatback and marinated in red wine with root vegetables and herbs overnight – a well-known technique for making lean pork juicy.
Clean and lard
Cut away all fat and membrane from the tenderloin and lard it with fine strips of fatback.
Marinate
Pour the red wine over the meat along with onion, parsley, celery greens, pepper, and salt. Let it sit overnight.
Brown the meat
Take up the tenderloin, pat it lightly dry, and brown it in butter.
Steam tender
Pour the wine into the pan little by little along with the meat stock, and let the meat steam in the oven or over low heat for about 30 minutes.
Make the sauce
Brown 60 g butter, stir in 40 g wheat flour, and thin with the pan juices from the roasting plus 1 dl cream. Cook the sauce together well.
Serve
Pour the sauce over the tenderloin when serving. Serve with fried tomatoes, pea purée, fried potatoes, and fruit jelly.
Deciliters/liters kept in modern form (2 del. = 2 dl, 1 del. = 1 dl). "Flesk" is given as fatback for larding. Butter is used for browning as in the original.
