Milk Lemonade

Milk lemonade for the sick: milk, sugar and water are boiled and cooled, then white wine and 2 tbsp lemon juice are added before the drink is strained.

About the dish

A wine-containing invalid drink from Erken's chapter on food for the sick. Wine was at that time considered strengthening for convalescents.

How to make it

    Bring to a boil

    Bring the milk, sugar and water to a boil.

    Cool

    Pour the mixture into a pitcher and let it cool.

    Add wine and juice

    Add the white wine and lemon juice, strain the drink and serve cold.

The quantities in the OCR were partly illegible and have been interpreted to the nearest reasonable measure (dl). The white wine can be omitted for an alcohol-free version.
