Original 1914 recipe
Verbatim from the first edition of the Big Cookbook.

Invalid's omelet of one egg with 1 tsp milk and salt, fried in butter over low heat, rolled up and served at once with jam or sugar. Erken 1914.

Erken's simple invalid's omelet of one egg, served with jam or sugar. The base recipe is also used for omelet with spinach and with ham.
Mix the batter
Whisk the egg yolk with the milk and a little salt. Gently fold in the stiffly beaten egg white.
Fry
Melt the butter in the frying pan, pour in the batter and fry over low heat until the omelet takes on a nice pale yellow color.
Serve
Roll the omelet up, place it on a warm platter and serve at once with jam or sugar.
Measure clarified (1 tsp butter, where the original is unclear in the print). Otherwise unchanged.
