About the dish

Erken's simple invalid's omelet of one egg, served with jam or sugar. The base recipe is also used for omelet with spinach and with ham.

How to make it

    Mix the batter

    Whisk the egg yolk with the milk and a little salt. Gently fold in the stiffly beaten egg white.

    Fry

    Melt the butter in the frying pan, pour in the batter and fry over low heat until the omelet takes on a nice pale yellow color.

    Serve

    Roll the omelet up, place it on a warm platter and serve at once with jam or sugar.
