About the dish

A festive restaurant omelette in the French style, named after Maxim's in Paris. Truffle, beef marrow, and Madeira sauce were typical luxury touches in party food around 1914.

How to make it

    Prepare the filling

    Blanch the marrow pieces, and bring them to a boil together with the truffle slices in the Madeira sauce.

    Heat the pan

    Melt the butter in a frying pan until it is hot and foaming.

    Whisk the eggs

    Whisk the eggs with cream, salt, and pepper.

    Fry the omelette

    Pour the egg mixture into the pan, stir quickly with a fork, fry the omelette quickly, and roll it up.

    Fill and serve

    Place the omelette on a warm platter, cut a lengthwise slit down the middle, and place the truffle slices and marrow pieces in it. Pour a very little Madeira sauce around it and serve at once.
