A simple household method from the fish chapter of "Stor kokebok" (1914) to make fresh cod keep for a few days and give it firmer flesh. Lightly salted cod was common everyday food along the coast.
Clean the fish
Clean the cod and cut it open along the belly. Do not wash the fish.
Salt down
Mix the salt and sugar and rub the fish well with the mixture.
Press and cure
Place the fish under light pressure and let it rest in a cool place for 2–3 days.
Cook
Cut the fish into slices, wash them, and place them in boiling water. Poach the fish until it is cooked through.
Serve
Serve with melted butter mixed with finely chopped hard-boiled egg, or with mustard sauce.
Measures modernized: "del." interpreted as deciliters (about 600 g salt and about 100 g sugar). Cooking water and accompaniment specified; time for salting and cooking given.
