Original 1914 recipe

Lucifer herring (lucifersild) from Erken 1914: a cold herring salad of soaked herring in strips mixed with boiled potatoes and raw apples, dressed with a piquant dressing of onion, parsley, chervil, tarragon, oil, vinegar and pepper.

A spiced, cold herring salad with herbs, apple and potato — "Lucifer" refers to the piquant, sharp dressing. Such herring salads belonged to the open-sandwich table and the light supper.
Prepare the herring
Soak the herring, remove the skin and bones and cut the fillet into diagonal strips.
Combine with potato and apple
Mix the herring strips with the boiled potatoes in strips and the raw, coarsely chopped apples.
Make the dressing
Mix the onion, parsley, chervil and tarragon, and pour over the oil, vinegar and pepper.
Assemble
Arrange the herring on a platter and pour the dressing over. Ideally let it stand a while before serving.
The quantities in the original's narrow ingredient column are somewhat unclear in the print and are given here in reasonable modern measures. "Grønsakerne" (the vegetables) is interpreted as the herbs and the onion.
